Ingredients
  

Sisig Pasta

  • 1 liter water
  • 1 teaspoon Salt
  • 1 teaspoon black pepper
  • 1/2 kilo pork face (maskara)
  • 1/2 Cup Butter
  • 1 Cup white onion minced
  • 120 Grams chicken liver chopped
  • 3 tablespoons Soy Sauce
  • 3 tablespoons chilies (siling labuyo)
  • Calamansi Juice
  • Pepper
  • 300 Grams penne pasta cooked according to package instructions
  • 1/4 Cup cream
  • 10 Cherry tomatoes roasted and halved

Instructions
 

  • Make the sisig: In a stockpot, combine water, salt, and pepper. Bring to a boil. Add pork and let simmer for 40 minutes to an hour or until meat is tender.
  • Remove pork from the pot. Strain and pat dry with a paper towel.
  • Grill pork for 5 to 7 minutes on each side or until skin is browned. With a knife, chop finely into small pieces.
  • In a large saucepan, melt butter. Add onions and sauté until translucent. Add chopped liver and sauté for 3 to 5 minutes or until cooked thoroughly. Add chopped pork pieces and cook for another 10 minutes.
  • Add soy sauce, chilies, and calamansi juice. Mix well. Season with salt and pepper.
  • Toss in cooked pasta. Mix well. Add cream and stir until combined. Adjust seasoning with salt and pepper. Garnish with cherry tomatoes.
