This garlicky longganisa recipe is famous in Vigan, Ilocos Norte. It's served in almost every establishment and has spawned numerous ways to serve it other than fried to a crisp with garlic rice and a fried egg. It's even stuffed in the Vigan version of the other famous dish, the Ilocos empanada.  

This homemade longganisa version is skinless, loaded with garlic, and is easy to make!
