Ingredients
  

Spaghetti with Sundried Tomatoes and Anchovies

  • 450 Grams spaghetti noodles cooked according to package directions
  • 2 cloves Garlic minced
  • 1 Cup sun-dried tomatoes packed in oil chopped finely
  • 2-3 pieces anchovies minced
  • 1 Cup fresh baby arugula
  • parmesan cheese grated
  • 3 tablespoons olive oil
  • Salt to season

Instructions
 

  • Saute the garlic in 1 tablespoon olive oil, then add the onions. Cook until translucent.
  • Add the anchovies, sundried tomatoes and let it simmer for 5 minutes. Season with salt and pepper.
  • Toss the cooked pasta and divide it into 4 bowls.
  • Garnish with baby arugula and grated Parmesan cheese.
