Ingredients
Spaghetti with Sundried Tomatoes and Anchovies
- 450 Grams spaghetti noodles cooked according to package directions
- 2 cloves Garlic minced
- 1 Cup sun-dried tomatoes packed in oil chopped finely
- 2-3 pieces anchovies minced
- 1 Cup fresh baby arugula
- parmesan cheese grated
- 3 tablespoons olive oil
- Salt to season
Instructions
- Saute the garlic in 1 tablespoon olive oil, then add the onions. Cook until translucent.
- Add the anchovies, sundried tomatoes and let it simmer for 5 minutes. Season with salt and pepper.
- Toss the cooked pasta and divide it into 4 bowls.
- Garnish with baby arugula and grated Parmesan cheese.
