Spicy Mexican Chicken Taco Recipe

In a saucepan, heat oil then sauté onions with cumin, chili powder, and cayenne pepper for 2 minutes.

Add the chicken and cook for a few minutes.

Stir in tomato paste and water.  Simmer for 4 to 5 minutes, or until meat is completely cooked. Season to taste. Set aside.

In a bowl, combine diced tomatoes, onions, and cilantro. Chill.

Prepare the sauce: In a saucepan, heat some oil then sauté garlic and onions with cumin, chili powder, and cayenne pepper. Add tomato sauce and water. Simmer for a few minutes. Season to taste.

Just before serving, get the salsa from the refrigerator; stir in lemon juice and season with salt and pepper.

To serve: Assemble on the table corn and flour tortillas, meat filling, salsa, sauce, and a variety of toppings (grated cheese, sour cream, hot sauce, and shredded lettuce).
