Ingredients
  

Spinach and Mushroom Pizza Ingredients

  • 2 tablespoons extra virgin olive oil plus extra for greasing
  • 2 tablespoons canola oil
  • 150 Grams fresh mushrooms (use button mushrooms), sliced
  • spinach leaves washed
  • 2 whole wheat pizza crust homemade or store-bought
  • 100 Grams mozzarella cheese grated
  • 2 Egg

Instructions
 

  • Preheat oven to 450°F. Grease baking sheets with olive oil.
  • Heat canola oil in a pan over high heat. Sauté mushrooms to remove excess moisture, about 3 to 4 minutes.
  • Blanch spinach leaves in a pot of boiling water, about 30 seconds to 1 minute. Immediately plunge into a bowl of ice-cold water. Squeeze to remove excess water.
  • Spread extra virgin olive oil on prepared pizza crust. Top with mushrooms, spinach, and mozzarella.
  • Bake in the preheated oven for about 10 minutes. Crack eggs over pizza and continue baking for 5 more minutes or until pizza is crisp and golden. Serve immediately.
