Ingredients
Spinach-Cheese Pancakes with Salmon and Egg
- 1 Cup spinach leaves chopped
- Butter for cooking
- 1 Cup cheddar cheese grated
- 1 213-gram can pink salmon drained and flaked
- 6 Egg fried sunny side up
- 6 stalks green onion chopped finely
- 1 3/4 cups milk
- 5 teaspoons Vinegar
- 2 cups all-purpose flour
- 1 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 teaspoon baking powder
- 1/2 teaspoon Baking soda
- 2 Egg separated
- 4 tablespoons Butter melted and cooled
- 1 Cup sour cream
- 8-10 stalks green onion chopped finely
- 1 teaspoon lemon juice
- 1/2 teaspoon Salt
- 1/4 teaspoon black pepper
Instructions
- Blanch spinach in a pot of boiling water for 30 seconds; transfer to a bowl of ice-cold water. Drain and squeeze to remove moisture. Chop finely and set aside.
- Prepare Homemade Pancake batter: Combine milk and vinegar in a medium bowl; let stand for at least 5 minutes. (The mixture will thicken slightly and form small clumps.) Sift all the dry ingredients into a large bowl and whisk several times to distribute ingredients evenly. Combine yolks with melted butter in a small bowl and whisk to combine. Pour into milk mixture; mix well.In the bowl of an electric mixer fitted with the whisk attachment, whip egg whites until stiff peaks form. Pour wet ingredients into dry ingredients all at once and stir in the spinach; whisk until just mixed. Using a spatula, fold egg whites into the batter.
- Heat a frying pan over medium-high heat and brush surface with butter. Pour 1/3 to 1/2 cup batter into pan and sprinkle 1 tablespoon cheese on top. Cook for 2 to 3 minutes or until bottom is golden brown and surface begins to bubble. Flip and cook for 1 to 2 minutes more. Repeat with remaining batter.
- Make the green onion sour cream sauce: Combine all ingredients in a medium bowl. Chill until ready to use. (Make this 1 hour before serving to allow flavors to meld.)
- To serve, arrange 2 to 3 pancakes on a plate. Top with flaked salmon and a fried egg. Top with green onion sour cream sauce. Garnish with green onions.
