Strawberry Brownie Parfait

Make the brownies: Preheat oven to 350°F.  Line an 8x8-inch baking pan with foil, then brush with melted butter. Set aside.

Melt chocolate chips and butter over a bain-marie.

In a bowl, beat together eggs, vanilla extract, and white sugar. Gently add chocolate mixture to the egg mixture; mix well. Gradually add all-purpose flour and salt; mix well.  Pour batter into the baking pan; bake for 20 to 25 minutes. Allow to cool before slicing into cubes.

Assemble the parfait: Alternate layers of brownie cubes, fresh strawberry slices, vanilla ice cream, and peanut butter in tall glasses. Finish with more ice cream, strawberries, and brownies on top. Repeat to make a total of 4 glasses.
