Sweet Chili Eggplant Stir-fry Recipe

In a wok or frying pan, heat oil. Sauté onions until translucent. Add garlic and ginger; sauté until fragrant. 

Add bell peppers and sauté until tender. Increase heat to medium-high then add eggplants and chilies; mix well. 

Season with sweet chili sauce, oyster sauce, and pepper. Transfer to a serving platter and top with bean sprouts and peanuts. Serve hot.
