Thai Beef Curry Stew Recipe

A warm delicious green curry coats these tender beef chunks.

Green curry is just as delicious as the more popular yellow curry. 

What makes green curry different from the yellow curry?

Yellow curry is the mildest curry and uses more turmeric in its paste while green curry uses green chilis.

Green curry, like this Thai version, still has all the warm delicious spices that we’re familiar with but without the turmeric that’s heavily present in yellow curries. For this beef curry, a Thai green curry paste—which you can find in the international section of your local supermarket—is mixed into sweet coconut milk. This incredibly tasty sauce is simmered, creating a fantastic stew of tender beef chunks, green beans, and eggplants.

Ingredients
  

Thai Beef Curry Stew Ingredients

  • 2 tablespoons vegetable oil divided
  • 1 kilogram beef cubes
  • 1 medium white onion sliced thinly
  • 2 tablespoons Thai green curry paste
  • 2 cloves Garlic crushed
  • 1 (400 ml) can coconut milk
  • 1 Cup beef stock more as needed
  • 2 tablespoons patis (fish sauce)
  • 1 tablespoon sugar
  • 1 bunch Baguio or green beans trimmed
  • 2 medium talong (eggplant) cut diagonally
  • 2 tablespoons lime juice

Instructions
 

  • Heat half the oil in a large saute pan over high heat. Add one-third of the beef and cook, turning, for 2 to 3 minutes until brown all over. Transfer to a plate. Repeat, in 2 more batches, with remaining beef. Set aside.
  • Heat remaining oil in the pan over medium-high heat. Add onion, and cook, stirring, for 5 minutes or until softened. Add curry paste and garlic and cook for 1 minute or until fragrant.
  • Return beef to the pan. Add coconut milk and beef stock. Bring to the boil. Reduce heat and simmer, covered, for 45 minutes.
  • Add fish sauce and sugar and simmer, uncovered, for 40 minutes or until sauce thickens. Stir in beans, eggplants, and lime juice. Cook, uncovered, for 5 minutes or until vegetables are tender. Serve immediately with bowls of steamed rice.
