Ingredients
  

Tuna Pita Pie Pockets Ingredients

  • 1 can (400-grams) chickpeas rinsed and roughly mashed
  • 1/4 red onion minced
  • 1/2 bunch flat-leaf parsley chopped finely
  • 1/4 bunch cilantro (wansoy) chopped finely
  • 1 1/2 tablespoons Calamansi Juice
  • 1/2 tablespoon olive oil
  • 1/2 clove Garlic minced
  • Salt
  • Pepper
  • 2 tablespoons mayonnaise
  • 1 can (420-gram) Tuna drained and lightly mashed with a fork
  • 1 small head Romaine lettuce chopped
  • 2 medium baguio tomatoes sliced into rounds
  • 4 pieces pita bread (large)

Instructions
 

  • Mix all ingredients (except lettuce, tomatoes, and pita) in a bowl, adding tuna last.
  • Heat pita bread, cut in half, stuff with lettuce and tomatoes, then fill with tuna.
