Ingredients
Tuna Pita Pie Pockets Ingredients
- 1 can (400-grams) chickpeas rinsed and roughly mashed
- 1/4 red onion minced
- 1/2 bunch flat-leaf parsley chopped finely
- 1/4 bunch cilantro (wansoy) chopped finely
- 1 1/2 tablespoons Calamansi Juice
- 1/2 tablespoon olive oil
- 1/2 clove Garlic minced
- Salt
- Pepper
- 2 tablespoons mayonnaise
- 1 can (420-gram) Tuna drained and lightly mashed with a fork
- 1 small head Romaine lettuce chopped
- 2 medium baguio tomatoes sliced into rounds
- 4 pieces pita bread (large)
Instructions
- Mix all ingredients (except lettuce, tomatoes, and pita) in a bowl, adding tuna last.
- Heat pita bread, cut in half, stuff with lettuce and tomatoes, then fill with tuna.
