Ube Bibingka Ingredients

  • unsalted butter for greasing
  • 3/4 Cup rice flour
  • 1/2 Cup all-purpose flour
  • 1/4 Cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon Salt
  • 2 large Egg
  • 1/2 Cup coconut cream (kakang gata)
  • 1/2 teaspoon ube flavoring
  • 1/2 Cup cheddar cheese grated


  • Preheat oven to 400°F. Grease 4 (4-inch) fluted pie pans or mamon molds with unsalted butter.
  • Whisk together rice flour, all-purpose flour, sugar, baking powder, and salt in a large bowl until combined; make a well in the center.
  • Whisk together eggs, coconut cream, and ube flavoring in another bowl; pour into the well and stir until just combined. Divide batter among pans. Evenly divide cheddar cheese on top of bibingka. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted in the center of a piece comes out clean. Serve warm.
