Ube Mamon Recipe

Pre-heat oven to 300 degrees F or 150 degrees C for 20 to 25 minutes. Grease the bottoms of the mamon molds only. Set aside. 

In a separate bowl, sift together cake flour, baking powder, and salt. Set aside.

In a large bowl or a stand mixer bowl, mix sugar and oil up to 3 to 5 minutes then add the egg yolks and beat untill well incorporated.

Pour the flour mixture into the sugar mixture then mix well. Stir in the ube flavoring. Set aside.

In another bowl, whisk egg whites until frothy then add cream of tartar.

Add sugar slowly when the egg whites are foamy and beat on High speed until stiff peak.

Using a spatula, gently fold in the egg whites mixture into the batter mixture.

Pour the batter mixture into the molds about 2/3 full. Tap the molds over the counter to release air packets or bubbles.

Bake for about 15 to 20 minutes or until the tops start to turn golden. Mamon is ready when a toothpick inserted comes out clean.

Remove from oven and invert the molds onto a wire rack right away. Cool completely.

Brush with butter and sprinkle cheese on top.
