200 grams spaghetti noodles
2 pieces beyond meat sausage, (regular sausage for non-vegans)
2 cups spinach or kale, torn into bite-sized pieces
4 cloves garlic, chopped
1/4 cup olive oil, divided
chili flakes, Optional
salt, to taste
pepper, to taste
a squeeze of lemon
parmesan cheese, as desired
Bring a pot of water to a boil. Once it is bubbling, quickly blanch your kale for 1 to 2 minutes until bright green in color. Set it aside.
Use the same pot to cook pasta noodles according to package instructions. Drain pasta two minutes before the recommended time for pasta to be al dente.
In a separate pan, slice your sausages and cook it in 1 teaspoon of olive oil until brown. Put it on the side and save excess oil.
In the same pan, add garlic and chili flakes. Cook until fragrant. Turn off heat.
Add your pasta noodles, sausage, kale, and olive oil to the pan and incorporate everything together. (You may add some of the excess oil from the sausage for more flavor.)
Finish it off with a squeeze of lemon and top with parmesan cheese.
