Curry dishes have a melange of bold flavors! Feel free to change the vegetables with what you have on hand but our take on the traditional vegetarian dish gets its depth of flavors from beef cubes.
2 tablespoons oil
1/2 kilo beef, cubed
1 to 2 tablespoons flour
3 tablespoons curry powder
3 cups beef broth
1 piece onion, quartered
2 pieces potatoes, cubed
1 piece cauliflower, broken into florets
1 package green peas, thawed
Heat oil in stockpot. Toss beef cubes in flour until coated. In batches, brown beef cubes on all sides in hot oil. Return beef and its juices to pot.
Sprinkle in curry powder. Pour in beef broth. Bring to a boil then lower to a simmer until beef is tender.
Add onions, potatoes and cauliflower. Simmer again until vegetables are cooked.
Add in green peas. Simmer until heated through. Serve with white rice.
