Ingredients
  

Summer Vegetable Salad Ingredients

  • 1/4 Cup lemon juice
  • 3/4 Cup olive oil
  • 2 tablespoon Garlic minced
  • 1 tablespoon onion minced
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano
  • Salt to taste
  • 2 Cup zucchini sliced into half-moons
  • 2 cups broccoli (florets), blanched
  • 2 cups tomatoes wedges
  • 1/8 Cup onion sliced
  • 2 cups fusilli pasta cooked
  • 400 Grams Shrimp boiled, peeled, and chilled
  • 2 cups Lettuce shredded
  • 1/8 Cup parmesan cheese grated

Instructions
 

  • Make the dressing: Whisk together lemon juice, olive oil, garlic, onions, dried basil, dried oregano, salt and pepper. Season to taste with salt and pepper.
