Waffle Pizza Recipe

Preheat a waffle maker. In a large bowl, whisk together flour, baking powder, salt, 2 tablespoons sugar, egg yolks, oil, and milk. Set aside. 

In another large bowl, whisk egg whites until frothy. Add 1 tablespoon sugar and whisk until stiff peaks. Fold into the waffle batter.  

Once the waffle maker is hot, lightly spray or brush with oil. Add about 1/3 cup batter to the waffle maker or as the manual instructs. Cook until golden brown on both sides, about 5 up to 10 minutes depending on waffle size and the waffle maker. (Consult your waffle maker manual for instructions as needed) Remove from the appliance and repeat with the remaining batter.  

While waffle is still hot, top with spaghetti sauce, pepperoni slices, and grated mozzarella cheese. Place on a tray and either bake in an oven or oven toaster with only the top heating element on for 3 minutes or until the mozzarella melts. Serve while hot.
