Ingredients
  

Watercress and Mozzarella Pasta Ingredients

  • 300 Grams whole-wheat spaghetti
  • 4 cloves Garlic minced
  • 1/2 Cup olive oil
  • 1 Cup Cherry tomatoes halved
  • 1 Cup watercress leaves trimmed
  • 1/4 Cup fresh basil leaves torn
  • 1/2 Cup Mozzarella Balls
  • Salt to taste
  • 1/4 Cup extra virgin olive oil

Instructions
 

  • Cook whole-wheat spaghetti in a pot of salted boiling water according to package directions.
  • Meanwhile, sauté minced garlic in olive oil until fragrant. Add cherry tomatoes and cook until the juices are released; transfer to a large mixing bowl.
  • Drain cooked spaghetti, setting aside some cooking water in case your pasta dish gets too dry. Immediately add spaghetti to the tomato mixture.
  • Add watercress, basil, and mozzarella; toss everything together while the pasta is hot. Add a little pasta water, if needed. The heat from the pasta will cook the watercress and warm the mozzarella. Season with salt and pepper to taste. Drizzle with extra virgin olive oil.
     
  • Transfer pasta to individual bowls and serve hot.
