This yema cake is a 2-layer soft and fluffy sponge cake, with creamy golden yema frosting, and salty grated cheese that will surely satisfy your taste buds.

These 3 main components will create the perfect yema cake:

  • Sponge Cake - My Sponge cake recipe is less sweet, compared to any other sponge cake recipe that you find, as our yema frosting will give all the sweetness that we need for this recipe.
  • Yema Frosting - I find the ratio of 12 egg yolks to 1 can of condensed milk perfect, to create a rich, creamy, yet not too sweet yema filling and frosting.
  • Grated Cheese - It's a perfect contrast to the sweetness of the yema frosting.

This recipe requires lots of eggs, so make sure you a have good quality, fresh eggs.
