Ingredients
Cheese Soup with White Wine Ingredients
- 2 tablespoons Butter
- 1 Small white onion finely chopped
- 1 Cup dry white wine
- 3 cups chicken stock
- 1 Cup cheddar cheese freshly grated
- Salt
- 8 pieces garlic toasts to serve
Instructions
- In a large stockpot over medium heat, melt the butter and then sweat the chopped onions until translucent. Pour in the white wine and bring to a boil. Lower heat then simmer. Reduce the wine until only a fourth remains.
- Pour in the chicken stock and bring the liquid to a boil. Lower heat to simmer then gradually add in the grated cheese in batches, stirring until melted. Season with salt and ground white pepper. Spoon into bowls and serve immediately with garlic toast.
