Ingredients
Baked Salmon with Pesto Ingredients
- 1 1/4 kilos salmon fillet fresh
- 1/3 Cup olive oil divided
- 1 Cup parsley leaves fresh, Finely chopped
- 1 tablespoons lemon zest
- 1 tablespoon lemon juice
- 3 cloves Garlic peeled, finely chopped
- Salt, to taste
- ground black pepper to taste
Instructions
- Preheat oven to 375?F. Place salmon fillet skin side down on a baking tray covered with parchment paper. Brush salmon with 1 Tbsp. olive oil and season with salt and pepper. Place in oven and roast at least 10 minutes for medium or according to your desired doneness.
- Meanwhile, make pesto: In a medium bowl, blend parsley, lemon zest, lemon juice, garlic, remaining olive oil, and salt to taste. Serve salmon with pesto. Recipe originally published in the December 2016 issue of Good Housekeeping Philippines.
