Ingredients
  

Baked Chicken Nuggets with Mango Barbecue Sauce

  • 800 Grams Chicken (use skinless chicken breast), cut into 1 1/2-inch squares
  • 1 Cup milk
  • 1 tablespoon Calamansi Juice
  • 1 Cup breadcrumbs
  • 1/2 Cup cheddar cheese grated
  • 1 teaspoon Salt
  • 2 teaspoons Chicken use fillet
  • 3 Egg
  • 3 tablespoons water
  • 1 ripe mango
  • 1 tablespoon Garlic minced
  • 1 Cup Tomato sauce
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar
  • hot sauce to taste
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Marinate chicken in milk and calamansi juice for an hour or so in the refrigerator.
  • Prepare the breading: Mix together breadcrumbs, cheese, salt, chicken seasoning. In another bowl, beat eggs with water.
  • Toss all chicken pieces in flour. Dip in egg mixture then coat evenly with breadcrumb mixture.
  • Spray each nugget with oil on both sides. Arrange on a wire rack and bake in a preheated 400°F oven for 25 minutes or until golden brown.
  • Make the Mango Barbecue Sauce: Puree mango until smooth. Saute minced garlic and oil. Add tomato sauce, mango puree, soy sauce, Worcestershire sauce, sugar, hot sauce, salt and pepper. Simmer for a few minutes. Remove from heat and stir in 1 tablespoon balsamic vinegar.
  • Serve nuggets with the sauce.
