Ingredients
Baked Chicken Nuggets with Mango Barbecue Sauce
- 800 Grams Chicken (use skinless chicken breast), cut into 1 1/2-inch squares
- 1 Cup milk
- 1 tablespoon Calamansi Juice
- 1 Cup breadcrumbs
- 1/2 Cup cheddar cheese grated
- 1 teaspoon Salt
- 2 teaspoons Chicken use fillet
- 3 Egg
- 3 tablespoons water
- 1 ripe mango
- 1 tablespoon Garlic minced
- 1 Cup Tomato sauce
- 3 tablespoons Soy Sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon sugar
- hot sauce to taste
- 1 tablespoon balsamic vinegar
Instructions
- Marinate chicken in milk and calamansi juice for an hour or so in the refrigerator.
- Prepare the breading: Mix together breadcrumbs, cheese, salt, chicken seasoning. In another bowl, beat eggs with water.
- Toss all chicken pieces in flour. Dip in egg mixture then coat evenly with breadcrumb mixture.
- Spray each nugget with oil on both sides. Arrange on a wire rack and bake in a preheated 400°F oven for 25 minutes or until golden brown.
- Make the Mango Barbecue Sauce: Puree mango until smooth. Saute minced garlic and oil. Add tomato sauce, mango puree, soy sauce, Worcestershire sauce, sugar, hot sauce, salt and pepper. Simmer for a few minutes. Remove from heat and stir in 1 tablespoon balsamic vinegar.
- Serve nuggets with the sauce.
