Ingredients
  

Gluten-Free Chocolate Cookies

  • 1/2 Cup almond meal
  • 1/4 Cup tapioca flour
  • 1/4 Cup rice flour
  • 3/4 Cup unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Salt
  • 1/2 Cup white sugar
  • 1/2 Cup Butter
  • 1 large Egg
  • 1/3 Cup milk

Instructions
 

  • Preheat oven to 375°f.
  •  In a bowl, combine almond meal, tapioca flour, rice flour, cocoa powder, baking soda, baking powder, and salt. Mix well.
     
  • In the bowl of an electric mixer fitted with the paddle attachment, cream sugar and butter together on medium-high speed.
     
  • Turn down speed to low and add the egg. Add half of the flour mixture, then add the milk. Add the rest of the flour mixture. Mix until well-combined.
     
  • Line a baking sheet with parchment paper or a silicone mat. Scoop out 11/2 ounces of dough and form into rounds. Space rounds 2 inches apart on the baking sheet. Bake in the preheated oven for 7 to 9 minutes.
     
  • Remove from the oven. Transfer to wire racks and let cool. Serve slightly warm.
