Ingredients
Grilled Pork Ear Wrap (Walkman Wrap)
- 300 Grams pork ears cleaned
- 2 tablespoons Salt
- 3 cups water
- 1/2 Cup plain yogurt
- 1 tablespoon cilantro (wansoy)
- 1/4 teaspoon iodized salt
- 1/8 teaspoon white sugar
- 1 teaspoon red pepper flakes
- 1 tablespoon Vinegar
- 2 tablespoons Soy Sauce
- 3 tablespoons dark beer (we used Cerveza Negra)
- 10 Small Soft Taco Shell lightly grilled
- 1 large Cucumber sliced into 1/2 inch by 1/2 inch by 3 inch sticks
- 1 medium sized onion sliced into thin rings
- toothpicks to hold the wrap
- bamboo skewers soaked in water
Instructions
- Boil pork ears in salted water for 20 minutes or until tender. Slice to desired size, about 3/4 inches by 3/4 inches.
- Make the yogurt sauce: Combine all ingredients in a bowl and mix well. Set aside.
- Make the marinade: In another bowl, combine red pepper flakes, soy sauce, vinegar, and dark beer. Soak pork ears in this mixture for 30 minutes. Skewer on bamboo sticks.
- Grill over hot coals until lightly golden.
- Assemble the wrap: On a pita bread, put 2 to 3 sticks of cucumber, onions, and grilled pork ears. Pour a teaspoon of the yogurt sauce into it. Tuck the ends of the pita towards the center and roll. Secure with a toothpick. Cut into half and serve.Cleaning tip: Request the butcher to clean pork ears upon purchase. This includes shaving the skin to remove hair and meticulously taking out the dirt in the inner parts of the ears. Wash it again before boiling.
