Bibingka is a well-loved Filipino delicacy during the holiday season. It’s a soft, spongy, and slightly sweet rice cake with butter, shaved fresh coconut, and sugar on top. 

This simple but mouthwatering rice cake is made with ingredients versatile enough that it leaves  room for creativity in the kitchen. If you’re a big bibingka fan, treat yourself to these interesting bibingka-themed desserts:

Bibingka Pancake from Pancake House

Pancake House turned the traditional bibingka into pancakes! The Petite Bibingka Pancakes are topped with grated queso de bola and slices of salted egg. An order of these petite pancakes (three pieces of mini pancakes) comes with a cup of Pancake House’s freshly brewed coffee (P159), hot chocolate (P169), or hot tea (P140).

Pancake House’s Petite Bibingka Pancakes are only available until January 6, 2018.

Bibingka Cheesecake from Le Sucre Lab

Most know Le Sucre Lab for their Dream Chocolate Cake, but now they’re making another breakthrough with their salty-sweet Bibingka Cheesecake (P685)! This dessert is made with a milky cheesecake that’s topped with itlog na maalat (salted egg) and toasted cheese. Just like other Le Sucre Lab cakes, these bibingka cheesecakes are also served in their signature copper-tin can.

Bibingka Waffle and Bibingka Ice Pop from Goto Monster

Bibingkrepe from Ça Va

What happens when you combine bibingka and crepe? You get Ça Va’s special Bibingkrepe (P300)!
