Chicken Curry Ingredients
- 1 liter water
- 1 Small ginger cut into 4
- 1 medium red onion cut into 2
- 6 cloves Garlic crushed
- 6 pieces bay leaves
- 1 tablespoon dried rosemary
- 1 stalk onion leek cut into 4
- 1 tablespoon black peppercorns
- 5 tablespoons Salt
- 1 kilograms chicken drumsticks
- 4 medium Potatoes cut into 4
- 2 medium carrots cut into 6
- 2 cups coconut cream or kakang gata
- 1 Cup water
- 3 tablespoons yellow curry powder
- 1 tablespoon paprika
- Salt to taste
- ground pepper to taste
- 2 medium sweet green bell pepper cut into 1 inch strips
- 1/4 Cup coconut oil for frying
Instructions
- Prepare the poaching liquid by putting the water, ginger, onion, garlic cloves, bay leaves, rosemary, onion leek, black pepper, and 5 tablespoons salt into a medium casserole. Turn the burner to High. Bring to a boil. Put the chicken and turn down the burner to Medium. Boil again for 30 minutes. Remove the chicken from the liquid. Set aside.
- In a saucepan, fry the potatoes and carrots in the coconut oil until brown. Set aside.
- In a large casserole, add the coconut cream, 1 cup water, curry powder, and paprika. Mix well and bring to boil.
- Add the cooked chicken. Add the potatoes and carrots. Season with salt and pepper. Simmer.
- Turn off the burner and add the sweet bell pepper. Serve while hot.
