Ingredients
- 4 pieces Chicken use fillets
- lemon juice
- 1 teaspoon dried rosemary
- dried basil leaves
- Salt
- 1 1/2 cups Green Lemon
- 2 teaspoons honey
- 2 tablespoons cilantro (wansoy)
- 1/4 Cup extra virgin oil
- Salt
- 2 water chestnuts peeled and julienned
- 3 orange segmented
- 2 Green Apple halved, seeded, and thinly sliced
- 2 heads Romaine lettuce torn into bite-sized pieces
- 2 Egg (hardboiled), sliced into wedges
- 6 wonton wrappers sliced into strips and deep-fried
Instructions
- Prepare the chicken fillets: Marinate chicken breast fillets in lemon juice, dried herbs, salt, and pepper. Let stand for at least 30 minutes. Cook on a grill pan for 10 to 12 minutes or bake in an oven preheated to 350°F for 15 to 20 minutes. Slice into strips and keep warm.
- Make the dressing: Whisk together lemon juice, honey, and cilantro. Pour oil in a slow, steady stream while whisking continuously. Season to taste with salt.
- In a bowl, mix together water chestnuts, oranges, green apple slices, lettuce, and hard-boiled eggs. Add grilled chicken breast and toss in dressing. Top with fried wonton strips and serve immediately.
