Ingredients
Slow-cooked Fresh Ham
- 2 kilos pork use boneless whole pork leg (pigue)
- 1 Cup fine sea salt
- 1 Cup sugar
- orange slices
- 2 tablespoons honey
- 1 tablespoon mustard
- 1 tablespoon Soy Sauce
- black pepper
- 1/2 Cup honey
- 2 tablespoons mustard
- 2 tablespoons red wine vinegar
- 2 cloves Garlic minced
- 2 tablespoons corn oil
- 1/2 teaspoon Salt
- 1 Small onion minced
- 1/4 teaspoon black pepper
- 1 tablespoon parsley sprigs chopped
Instructions
- Using an ice pick, poke holes all over the chilled pork leg. Mix together salt and sugar, and rub all over the pork. Massage for a few minutes. Place in a shallow dish and leave in the refrigerator overnight or up to 24 hours.
- Wipe off excess sugar and salt from pork. Wrap meat with aluminum foil. Bake in a preheated 230ºF to 250ºF oven for 6 to 8 hours. When cooked, unwrap and remove skin but leave the fat on.
- Make the glaze: Combine ingredients in a bowl. Brush fat with glaze and bake at 430ºF until caramelized, about 30 minutes.
- Make the honey-mustard sauce: Whisk together all the ingredients until well combined. Drizzle over ham slices or serve on the side.
- Before serving, garnish with orange slices and rosemary sprigs if desired.
