2 (170-gram) chicken breast fillet
½ cup cornstarch
2 egg yolks, beaten
½ tablespoon five-spice powder
1 cup soy sauce
¼ cup Chinese wine
¼ cup sugar
1 tablespoon garlic powder
½ tablespoon five-spice powder
pepper, to taste
1 Using a mallet, flatten each chicken breast. Set aside.
2 Make the marinade: Place all ingredients in a bowl and mix well. Add chicken; cover and place in the refrigerator. Marinate chicken for at least 4 hours.
3 On a plate, place cornstarch seasoned with five-spice powder. In a bowl, add beaten egg yolks.
4 Heat oil to 320°F.
5 Drain chicken. Dredge chicken in cornstarch mixture, dip in egg, then coat again with the cornstarch mixture.
6 Deep-fry chicken in hot oil until cooked, about 5 minutes. Place chicken on a paper towel-lined plate to drain excess oil.
7 Turn up heat until oil registers 375°F. Re-fry chicken for 10 to 15 seconds.
8 Drain on paper towels. Chop into strips.
