WATCH: How to Make Tortang Talong (Eggplant Omelet)

Tortang talong is a fuss-free Filipino-style eggplant omelet dish. It takes very little time to prepare and follows a simple recipe. Your favorite breakfast is sure to be ready in minutes. Typically served with rice, this dish could also be eaten with pandesal or a fresh tomato salsa. Want a meatier flavor in your omelet? Mix in ground pork with the eggs for a simple yet satisfying meal!

 

2 pieces Chinese eggplant
1/2 kilo ground pork
2 cloves garlic, minced
1 large red onion, chopped
2 eggs
4 tablespoons cooking oil
salt for seasoning

 

1 Grill the eggplant until the color of its skin turns almost black. Set the eggplant aside to cool.

 

2 Sautè the ground pork and garlic. Simmer until ground pork is cooked, season with salt. Set aside.

 

3 Place the eggplant on a flat surface, peel and flatten using a fork.

 

4 In a bowl, season the eggs with salt and beat together with 3-4 tablespoons of the cooked ground pork.

 

5 Slide the eggplant in a non-stick skillet. Add the egg mixture.

 

6 Fry the eggplant. Makes sure that both sides are cooked, about 5 minutes on each side.
