Continuing her farm life series, Bea Alonzo is back with another video that’ll make you want to move to the province. Earlier in March, the actress gave us a full tour of Beati Firma, their farm in Zambales and shortly after, she welcomed us inside their farmhouse. She considers this place her sanctuary, so in another video, Bea teaches us how to make an easy tilapia dish—a recipe she learned from her personal assistant—using ingredients she gathered from the farm as well as from the local market.
It’s called “sinaing na tilapia sa gata na may kamias“! These days, people are turning to simple recipes with fresher ingredients and fewer preservatives. For this dish, all you’ll need are:
- Tilapia
- Kamias
- Bawang
- Sibuyas
- Luyang dilaw
- Siling labuyo
- Siling panigang
- Gata
- Salt
- Pepper
- Water
Bea got the tilapia from her family’s fish pond in the farm! You’ll also need dahon ng saging to make this dish. She uses a claypot to cook her food, but obviously, you can do this at home with a regular pot.
As promised, cooking sinaing na tilapia sa gata na may kamias is super simple:
- 1. Place the banana leaves inside the pot to keep the fish from sticking to the bottom.
- 2. Rub the fish with salt then wrap it in banana leaves.
- 3. Place unsliced kamias in the pot then put the wrapped fish on top of that layer.
- 4. Next, add unsliced kamias naman, to make sure the fish absorbs all that flavor.
- 5. Add water so that it steams.
- 6. Season it with salt and pepper.
- 7. Cover the pot and let it simmer for 15 to 20 minutes.
- 8. Add the rest of the ingredients, except for the siling labuyo, which will be used as a garnish.
- 9. This time, leave the pot uncovered and let it simmer again for 15 to 20 minutes.
- 10. Enjoy!
