How To Avoid Overcooked Macaroni In Sopas

No more mushy pasta in your sopas!

Sopas is one of those dishes that can instantly make anyone feel better. It’s one of those classic everyday dishes that are naturally delicious and hearty. 

There are two things however that can mess up an otherwise perfectly delicious bowl of sopas: there’s is more pasta than there is soup, and the pasta is overcooked to the point that it’s mushy.  

Both of these could be avoided! 

There are a few things you can do. One, you can add less macaroni so when the macaroni has absorbed all the soup it can absorb, the pasta hasn’t overwhelmed your dish and turned it into a pasta dish rather than a soupy one. You can add as little as 1/4 cup uncooked macaroni for every 1 liter chicken broth you add to your pot. You can always add and cook more later if you intentionally pick out the macaroni. 

Two, you can avoid this pasta problem altogether by cooking the macaroni separately and adding it in just then you are ready to serve. This eliminates overcooking as well as the eventual take over of the pasta of what should be soup instead of a pasta dish. 

This cooking solution relies on the fact that macaroni and other pasta made from wheat readily absorb liquid as long as there’s liquid to absorb. That’s why pasta can easily be overcooked and why many recipes require you to cook the pasta only until al dente or to the point where it is cooked through but still has a little bite to it

If you want to make sure that your sopas is perfect every time, cook the macaroni separately and only add it into the soup when you reheat it to serve. Here’s what you do:

  1. 1 Bring a pot of water to a boil over high heat. Add salt to season. Reduce to medium-high heat. 
  2. 2 Add macaroni. (Add 1/4 cup per 4 cups sopas broth you plan to make. Add more as desired.) 
  3. 3 Boil the macaroni for 8 minutes. Grab a macaroni and cut it in half or bite into it. See if there is still a small white center that is uncooked. (This is al dente.) 
  4. 4 Drain the water from the macaroni and set aside until ready to serve the sopas
  5. 5 When ready to reheat and serve, heat sopas until about to simmer. Add the cooked macaroni and simmer sopas until macaroni is heated through. 
  6. 6 Remove from the heat and serve immediately. 

This tip requires two pots but if you want to eat a perfect bowl of sopas every time, you’ll be glad later that you took this advice when you have leftover sopas to look forward to.
