Ingredients
Vigan Longganisa Pasta Ingredients
- 500 Grams linguine
- 8 pieces Vigan longganisa
- 3 tablespoons olive oil
- 1 Cup parmesan cheese
- 1 large white onion diced
- 5 cloves Garlic finely chopped
- 3 large tomatoes diced
- 4 tablespoons red chili flakes or to taste
- 1 Cup pasta water
- 1/4 Cup dried basil leaves crushed
- Salt to taste
- Pepper to taste
Instructions
- Cook pasta until al dente. Save 1 cup of pasta water for later use. Drain pasta and set aside.
- Remove Vigan longganisa from casing and fry in olive oil in a pan over medium high heat. Crush longganisa until it resembles ground meat. Set aside and leave oil in the pan.
- Using the same pan, sauté onion and garlic. Add tomatoes and continue to toss until fragrant.
- Add cooked longganisa and pasta water to the pan. Toss until pasta is evenly coated with the sauce.
- Gradually add parmesan cheese and chili flakes and continue tossing. Salt and pepper to taste. Add dried basil leaves.
- Serve warm and garnish with extra dried basil leaves and parmesan cheese. TIP: You may add more olive oil to the cooked pasta if you think the sauce is too dry.
