Ingredients
  

Vigan Longganisa Pasta Ingredients

  • 500 Grams linguine
  • 8 pieces Vigan longganisa
  • 3 tablespoons olive oil
  • 1 Cup parmesan cheese
  • 1 large white onion diced
  • 5 cloves Garlic finely chopped
  • 3 large tomatoes diced
  • 4 tablespoons red chili flakes or to taste
  • 1 Cup pasta water
  • 1/4 Cup dried basil leaves crushed
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Cook pasta until al dente. Save 1 cup of pasta water for later use. Drain pasta and set aside.
  • Remove Vigan longganisa from casing and fry in olive oil in a pan over medium high heat. Crush longganisa until it resembles ground meat. Set aside and leave oil in the pan.
  • Using the same pan, sauté onion and garlic. Add tomatoes and continue to toss until fragrant.
  • Add cooked longganisa and pasta water to the pan. Toss until pasta is evenly coated with the sauce.
  • Gradually add parmesan cheese and chili flakes and continue tossing. Salt and pepper to taste. Add dried basil leaves.
  • Serve warm and garnish with extra dried basil leaves and parmesan cheese. TIP: You may add more olive oil to the cooked pasta if you think the sauce is too dry.
