We took one of our most watched and tried cupcake recipes and made them better by adding one delicious ingredient: ube halaya.

What Is Ube and Cheese Cupcakes?

Cheese cupcakes are a local panaderya staple. These mix sweet and salty flavors in one delightful snack that are popular with kids and adults alike! 

One of our most tried-and-tested cupcake recipes is the cheese cupcakes recipe so it’s just natural that we want to make it better! We thought a swirl of ube cupcake batter would not only make these cupcakes gorgeously pretty with the light yellow with purple streaks, but they would also taste quite fantastic, too.

How to Serve Ube and Cheese Cupcakes

There is nothing stopping you from devouring these cupcakes as they are. (We won’t blame you!) However, you might want to make these extra special in some way, especially if you’re presenting these to guests. 

Here are other ways to serve this dish:

  • Add frosting: If you’re looking for frosting on what should be mini cakes, we suggest you add a simple vanilla frosting. You can even jazz it up and top it off with another layer of either ube-flavored buttercream or cream cheese frosting! You can even try coconut whipped cream for a lighter topping. 
  • Stuff with more cheese or ube: There was a trend not too long ago when every cupcake’s center was hollowed out and stuffed with something. This trend is not passé and can actually make your cupcake better. Try a sweetened coconut or macapuno. Maybe extra ube halaya or cream cheese filling. You can even add sprinkles for a surprising spill! The possibilities are up to you.

How To Make Ube and Cheese Cupcakes

Making this fusion ube and cheese cupcake was easy! We made a batch of our cheese cupcakes recipe which we already know is delicious. It starts with softened butter creamed with sugar. Eggs and vanilla follow together with another cheese cupcake staple: sweetened condensed milk.

Next are the dry ingredients. You can do this straight in the bowl you just mixed the wet ingredients into by placing a strainer over or sifting the flour, baking powder, and salt straight into your bowl. Mix well.

This is your cupcake batter. You can add grated cheese to this or to make it even better with our little tweak, we took a cup of this batter and stirred in some ube halaya to that portion. Combine these two batters in the cupcake liners using a spoon. You can swirl the batters together better if you use a toothpick.

Tips To Make The Best Ube and Cheese Cupcakes

1 Go ahead, and use salted butter. 

Not everyone stocks up on unsalted butter and even so, you may find that all you have is regular salted butter in your refrigerator when the craving hits. That’s okay! If you have salted butter, just omit any additional salt in the recipe so you don’t end up with a cupcake that’s too savory in taste. 

2 Use cheese cubes. 

We suggest you use the large grater to shred the cheese for this recipe. These create bigger rivulets of salty cheese when you take a bite! However, if you want bigger pockets of cheese, chop up the cheese into cubes. Plus, if you want those pockets to be melty when warmed up, swap the cheese for the quick-melting kind for an even better eating experience. 

3  Just add ube

You don’t have to make divide the batter if you’re trying to save yourself from washing another bowl. What you can do instead is swirl in spoonfuls of ube halaya into each cheese cupcake batter to make a marbled design. You can even scoop out the centers and stuff ube jam into the holes of these cheese cupcakes, too. Cover it up with a layer of cheese frosting.

Ube and Cheese Cupcakes Storage Tips

1 These cupcakes are best at room temperature.

These are fantastic straight from the oven while still warm we think but if you have more than you can consume in one sitting, store them covered, to prevent pests from attacking them, on your kitchen counter. 

2 Refrigerating these cupcakes is optional.

Cupcakes last longer in the refrigerator but it’s best if it’s not refrigerated at all. That’s because cupcakes lose moisture 

3 If you absolutely have to, you can freeze these cupcakes.

No cupcake — or baked goods, for that matter — can last forever on your counter or even your ref. If you somehow need to store it for longer than 1 week, you can freeze these cupcakes. Just remember to wrap well in plastic wrap to prevent it from absorbing odors in the freezer.

Ube and Cheese Cupcakes Recipe

We mixed ube jam into our famous cheese cupcake recipe, and it's pretty delicious.

Servings 12 cupcakes

Ingredients
  

  • 1/2 cup unsalted butter cubed
  • 1/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup condensed milk
  • 1 1/2 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 block cheddar cheese grated large
  • 1/4 cup ube halaya
  • 1/2 teaspoon ube flavoring and coloring

Instructions
 

  • Preheat oven to 350 degrees F (180 degrees C). Line a 12-cup cupcake tray with cupcake liners.
  • In a large bowl, cream butter and sugar together until butter mixture has softened. Mix in eggs. Stir in vanilla extract and condensed milk.
  • Sift all-purpose flour, baking powder, and salt over the butter mixture. Fold with a silicone spatula to mix. Scoop out about 1 cup batter into another bowl. In the remaining batter, stir in grated cheese and mix until just combined. In the other bowl, stir in ube halaya and ube flavoring until just combined.
  • Using two spoons, place 1 scoop cheese batter onto prepared cupcake tray and top with 1 scoop ube batter. Repeat with remaining batters until all the cupcake liners are filled about 3/4. Lightly bang the cupcake tin on the countertop to remove any bubbles. Using a toothpick, lightly swirl the cheese and ube batters together.
  • Place cupcake tray in the preheated oven. Bake for 25 to 30 minutes or until a toothpick inserted in the center of the cupcake comes out clean. Let cool completely on a wire rack before serving.

Notes

Want more ube flavor? Add more ube flavoring and coloring to get that punch of purple instead of lavender.  
Feel free to add more cheese to the cheese cupcake batter. 
Looking for frosting? Add ube buttercream, cream cheese frosting, or even coconut buttercream to give it even more of a delicious Asian touch.
