Adobo sa Puti Recipe

There are many recipes for adobo, including other variations like adobo sa patis (fish sauce) and adobo sa gata (coconut milk) to mention a few. This recipe however takes the popular adobong baboy and removes a seemingly key ingredient from the dish to create what could be the most basic adobo recipe in its lineup of recipe variations: adobong puti.

Ingredients
  

Adobo sa Puti Ingredients

  • 1 kilo pork (use pork belly (kasim or liempo)), adobo cut
  • 1 whole Garlic pounded
  • 2 cups white vinegar
  • 1 Cup water
  • 5 1/2 tablespoons white sugar
  • 3 teaspoons Salt
  • 2 pieces bay leaf
  • 1/4 Cup peppercorns

Instructions
 

  • Marinate meat in garlic and vinegar for 30 minutes.
  • Put water, bay leaf, peppercorn, sugar, and salt in a pot and add in meat mixture.
  • Let boil then lower heat and simmer meat until tender, about 30 to 40 minutes.
