There are many recipes for adobo, including other variations like adobo sa patis (fish sauce) and adobo sa gata (coconut milk) to mention a few. This recipe however takes the popular adobong baboy and removes a seemingly key ingredient from the dish to create what could be the most basic adobo recipe in its lineup of recipe variations: adobong puti.

Ingredients
Adobo sa Puti Ingredients
- 1 kilo pork (use pork belly (kasim or liempo)), adobo cut
- 1 whole Garlic pounded
- 2 cups white vinegar
- 1 Cup water
- 5 1/2 tablespoons white sugar
- 3 teaspoons Salt
- 2 pieces bay leaf
- 1/4 Cup peppercorns
Instructions
- Marinate meat in garlic and vinegar for 30 minutes.
- Put water, bay leaf, peppercorn, sugar, and salt in a pot and add in meat mixture.
- Let boil then lower heat and simmer meat until tender, about 30 to 40 minutes.
